US Restaurants Are Switching from Healthier Seed Oils to Unhealthy Animal Fats

Several fast-food chains across the US are reportedly swapping out vegetable oils for “beef tallow” in their cooking processes, falsely claiming it to be a healthier option. “Beef tallow” is clarified fat that comes from around the organs of cows.

Outlets like Steak ‘N Shake, Popeyes, Buffalo Wild Wings, and Outback Steakhouse are among those who have made or are considering this shift away from “seed oils” like rapeseed and sunflower oil. Steak ‘N Shake’s chief supply chain officer, Chris Ward, stated, “Our fries will now be cooked in an authentic way, 100% beef tallow, in order to achieve the highest quality and best taste.”

This “beef tallow movement” is gaining traction, with even independent restaurants joining in and websites and apps emerging to help folks find “seed oil-free” dining options. The claims that seed oils are harmful have been widely spread. However, health experts are warning against believing these claims.

This reactionary fashion began in 2020 when carnivore diet advocate Paul Saladino appeared on The Joe Rogan Experience podcast, denouncing seed oils as detrimental to health, alleging they cause inflammation and increase the risk of cardiovascular disease.

However, a 2020 review found that linoleic acid, found in seed oils, was linked to a reduced risk of cardiovascular disease and type 2 diabetes. A further 2021 review corroborated this, finding the same link between linoleic acid and a lowered risk of cardiovascular disease. An older review study found that higher levels of linoleic acid in the diet resulted in lower levels of inflammation.

“Beef tallow”, composed primarily of saturated fat, is far from a healthy food, as one tablespoon contains almost half saturated fat, 115 calories, and 14mg of cholesterol. Diets high in saturated fat have been linked to inflammation and a higher risk of cardiovascular disease.
