Refreshing thai noodle salad from Camper Van Kitchen!
For many of us right now noodles are a cheap pantry staple. Today Gareth shares one of his favourite ways to jazz your noodles with a few fresh veggies and a refreshing sauce.
Refreshing Thai Sauce:
2 tsp fresh ginger, peeled and minced
1⁄4 cup tamari (or you can use soy sauce)
2 tsp maple syrup
1 ½ tsp sesame oil
2 tbsp lime juice
2 tbsp fresh coriander, finely chopped
1 serving of noodles per person (use noodles of choice, we used rice pad thai noodles)
Approx 2” piece cucumber, cut into thin ribbons
½ a carrot, peeled and cut into matchsticks
½ a capsicum, finely sliced
1 radish, finely sliced
1 spring onion, finely sliced
1 cup edamame (we used frozen), cooked to packet instructions
First prepare the sauce. Put the ginger, tamari, maple syrup, sesame oil, lime juice and coriander in a small bowl or jug. Mix all together thoroughly and set aside.
Next, cook your noodles according to packet instructions, While the noodles are cooking, prepare the fresh vegetables. Once the noodles are cooked and drained, place them in serving bowls. Arrange the prepared vegetables on top of each bowl, then drizzle with the Refreshing Thai Sauce and enjoy!
